Allergens in Kimchi?

  • Shellfish/Fish: Most traditional kimchi contains fermented shrimp (jeotgal) or anchovy sauce, making it dangerous for those with shellfish allergies.
  • Histamine Intolerance: As a fermented food, kimchi is high in histamines. This can cause “pseudoallergic” reactions like headaches, itching, or red skin.
  • Other Ingredients: Common ingredients include garlic, red pepper, ginger, and sometimes fish sauce, which can cause indigestion if consumed in large amounts.
